2 cups strawberries
4 cups of blueberries
1 cup raspberries
1 cup blackberries
Let’s start by talking about coconut. You might be tempted to put the coconut meat in your blender but there really is no point because once you have taken out the milk, there is no extra juice.
When you break a coconut in half, save the juice in the middle.
Then cut the meat or grate it. In a very fine colander, you can squeeze out the juice.
If this is a lot of effort, you can buy fresh coconut milk for the supermarket.
Using all of your berries is incredibly simple, just throw them in the blender with your coconut milk.
The great thing about this recipe is that is the play around with the number of berries, you can change the color of the juice.
More blackberries and blueberries will make the juice a richer purple.
More strawberries and raspberries will have a brighter red.
Sometimes we know that even though we want to be healthy, time and money don’t permit it.
If it is a bit of a challenge to buy all of your berries, there are bags of frozen fruits of the forest.
Fresh is always better but frozen is the next best option.
Fruits of the forest and coconut may seem like chalk and cheese but the flavors compliment each other.
Berries have a sour/citrus taste and this is balanced by the creaminess of the coconut.
2 coconuts will produce about a whole cup of coconut milk. So you will get at least 5 glasses of juice.
